Wilton runs his own highly sophisticated processing facility, closely assessing his crop at every stage to calculate and adjust shade and nutrition with scientific accuracy. The “92” in his farms name refers to his commitment to produce coffee scoring 92points and above – truely top shelf
coffee.
This lot has been double fermented, first for 2 days and then a further 5 days with extra yeast. The “thermo shock” washing process then involves washing the coffee first in warm water and then in cold, stabilizing aroma compounds and “locking in” flavour.
