Manos Juntas micromill was established in Sotara by Colombian coffee exporters Banexport with the aim to centralise and simplify coffee processing for the small farm holders in the region. Centralised processing means that individual producers are able to concentrate on their crop and harvest, while post-harvest processing can be managed at Banexport’s facility, leading to higher quality and greater consistency, and therefore better prices for producers.
This lot has been carefully fermented with constant assessment of Brix and pH levels to establish fermentation end-point. Cherry is then sun-dried for 30-45 days before being milled and prepared for export.
