The Solola department of the western region of Guatemala is where we find Santa Catarina Ixtahuacan – a small municipality where this coffee is grown. Situated around 1770 meters above sea level the farm is just over four and half hectares in size. Producing just two varietals (Caturra and Bourbon) means more focus has been placed on creating high quality cup profiles.
Locally the producers assist the surrounding community by participating in re-forestation and diversification of the natural environment. Conservation of soil, flora and fauna is achieved by planting forest, citrus and fruit trees. They also value the growing and consumption of organic food, and encourage the local community to do the same, while valuing the consumption of native species also.
