Manos Juntas Micromill (meaning “many hands”) was established by coffee exporters Banexport with a simple concept in mind: sharing the load benefits everybody. The Micromill services many small local farms and handles all of the post-harvest processing, from sorting and grading to export preparation, so that farmers can concentrate their efforts on growing exceptional coffees and harvesting only when cherry is at it’s ripest.
This lot has been carefully fermented with constant assessment of Brix and pH levels to establish fermentation end-point. Cherry is then sun-dried for 30-45 days before being milled and prepared for export.
